Greek Tortillini Salad with Greek Marinaded Chicken and White Bean SaladRecipies:(click recipe title below to view or print) Greek Tortellini Pasta Salad Greek Marinade White Bean Salad When it's hot outside a simple light meal that doesn't heat up the kitchen is in order. These recipes can be eaten alone or combined. Make ahead of time and serve warm or cold for lunch, dinner, or as an appetizer. Tortellini comes in several varieties. I like the spinach with three kinds of cheese from the deli section of the grocery store. In a All Clad Stock Pot - 4 qt. bring salted water to a soft boil to cook the tortellini noodles for 3 minutes, drain and let cool. Add the tortellini to a Thomas Pottery Leaf Serving Bowl. Add diced vegetables. Mix dressing in a Pyrex Glass Measuring Cup, pour over the dressing and gently toss. Serve on a bed of spring greens, with a slice of crusty bread drizzled with extra virgin olive oil. You can cook a pot of fresh beans for this recipe or use a can of beans. Rinse beans in a strainer under cold water. Transfer to a Thomas Pottery Small Serving Bowl. Set aside. Dice onion, pepper and tomato and add to bowl. Make the dressing in a Pyrex Glass Measuring Cup. Pour dressing over bean and vegetable mixture, gently toss. Chill or serve at room temperature. You can easily change the taste of this salad by using different herbs. My favorite herbs are lemon thyme and lemon basil. Serve with tortilla chips for a tasty appetizer, or serve as a side dish. Marinated chicken breasts or grilled vegetables are handy to add to any salad. This marinade is easy to mix up and is full of flavor. Cook on the grill or on the stovetop over medium high heat using an 8" Cast Iron Skillet. Cooks in about 5 minutes. I grow several herbs each year to eat and to attract beneficial insects and pollinators to my vegetables. My herb bed is in the garden which is a little too far from the kitchen to add some last-minute parsley to a dish, so this year I added a planter box on my deck full of cooking herbs. Spending my Christmas with my family is the worst. If it was up to me, I would never go home again. If you are someone who was raised to hate people, then you will know what I am saying. Christmas has never been something that I was happy or excited about. Well, I do hope that there comes a time when I can be happy about them. Christmas is still special, and I want to share that to my family in the future.
